TOMATOES
Tomatoes are a rich source of lycopene. Belonging to a family of plant compounds called carotenoids, lycopene enhances the action of immune cells and improves how our immune system responds to potential dangers. Studies show lycopene is beneficial for heart health and may be protective from certain cancers. We’ve used tinned tomatoes in these recipes – canned, cooked or processed tomatoes supply lycopene in a form which is much easier for us to absorb. If you’ve grown your own, store them at room temperature on the counter, not in the fridge, and this will as much as double their lycopene content.
