Donate fruit for a tasty curry sauce

Pete Chan hopes to showcase Perthshire flavours

A Perth takeaway wants to create a unique Perthshire curry sauce.

Pete Chan from China China at Craigie Cross is on the look out for home grown fruits and vegetables from his customers’ gardens.

And in exchange for the home grown produce, China China will reward residents with a curry made using their own ingredient­s.

Pete Chan said: “A lot of customers were complainin­g about all the fruit they have in their gardens, apples and plums in particular.

“We use apples in our curry sauce using a traditiona­l recipe and in our curry oil, and we could use the plums for our sweet and sour sauce.

“I thought why don’t we take a few from different gardens around Perthshire and represent Perthshire in a sauce?

“Once we put it out there, it has gone crazy, fruit has been arriving by the truck load.

“We will be making our first batch of sweet and sour on Monday using apples from Fowlis Wester and two brothers in Muirton and Letham.

“And from that sweet and sour sauce, we can then produce other sauces such as sweet chilli sauce.”

His aim is to get a Chinese curry sauce that has all the areas of Perthshire represente­d in it.

He continued: “Get in touch with us first if you have stuff to hand in, because we don’t want too much from the same area - we want to get as much from as many different places as we can.

“The flavour will taste pretty much the same, but I will keep a note of which ones we do use in each batch so people know where it’s come from - just a bit of community spirit.

“And we will reward those who come in with a couple of meals using the sauces with their ingredient­s, so they can taste their own sauce for a little treat.

“I had a guy offering stuff from his garden in Dundee, he had lots of trees, but I had to say no because I want to keep it from Perthshire and make it feel a bit more local.

“I am like a wee boy at the moment I am so excited about it.

“We will have the first crack at it on Monday.

“We make our sweet and sour sauces every week and then our curry sauce every five or six weeks, so unless we freeze the fruit there is only a couple of times we can do this.

“But this is the best time in the autumn when the fruit is as good as it is.”
