Casual and relaxed feel as Postbox becomes Wills

The owners of a popular Perth restaurant have revealed changing eating trends in the city have prompted them to change their business model.

David and Kat Will from The Postbox on George Street say they are “very excited” about transformi­ng the restaurant into something new.

And the new cafe and bar will even have a new name - ‘Wills’, named after the two owners.

David said: “We are changing from a restaurant to do something more casual.

“We are moving away from fine dining - after doing it for six and a half years, it feels like it is time for a change.

“We have noticed a change in eating out trends, everything is moving towards a more casual dining, so it will be something along those lines.

“The restaurant itself will be changed to make it more cosy, so it will be very different from what it is now, and we will be serving more snack food rather than a sit-down, three-course meal.

“The decor will be changing, the opening hours will change so we are open all through the day, and the name will be changing to ‘Wills’.

“I can’t wait, we are very excited for it.”

The Postbox will be serving its last meals on Friday, April 17, and will then close for the transforma­tion into ‘Wills’.

Kat said: “Business was getting harder and harder, so it made sense to change and try something new.

“It will be family-friendly, pet-friendly and we will do takeaway food as well, like soups, sandwiches and fish and chips.

“It will still be the same quality of food, just a different type of food, and in the evenings we will have live music.

“This was not an overnight decision for us, but we knew we had to do something.

“A cafe and bar just appeals to us.

“We had a look around Perth to see what works and what we think people are after.

“We know Perth is struggling, so we want to close and then reopen as something we think will be stronger.”

During the refurbishm­ent, the Cellar Bar underneath The Postbox will remain open, and David and Kat are hoping to have Wills open by the beginning of June this year.
