MARTHA’S ICED RING BISCUITS
It’s impossible to have one of these nostalgic biscuits without wanting another! Try Martha Collison's recipe.
FOR BISCUITS:
100g unsalted butter, softened
100g caster sugar
1 tsp vanilla extract 1 large egg
200g plain flour
½ tsp baking powder ½ tsp fine salt
FOR BISCUITS:
250g royal icing sugar Gel food colourings
TO MAKE:
1. Cream butter and sugar together. Add vanilla extract and egg, then mix until combined.
2. In a small bowl, combine flour, baking powder and salt. Add dry mixture to wet and mix until a rough dough forms. Wrap in clingfilm and chill in fridge for 30 minutes.
3. Preheat oven to 160°c. Roll out dough between two pieces of baking parchment to thickness of 0.5cm. Cut 5cm circles using a cookie cutter and punch a small hole in the middle. Transfer to lined baking tray and bake for 10-12 minutes.
4. Mix icing sugar with water to make a thick white paste. Divide between three bowls and add a tiny amount of colouring to each.
5. Dip each biscuit face down into one of the bowls of icing, then drizzle lines of a different colour across the top. Drag a cocktail stick through the stripes to keep a feathered effect. Set for a few hours and share!
