225g rolled oats
225g plain flour
250g mixed dried fruit, larger pieces halved
Pinch of salt
140g unsalted butter
225g light soft brown sugar 90ml maple syrup
1tsp bicarbonate of soda
1 Preheat oven to 170C/gas 3 and line three big trays with non-stick parchment. 2 In a bowl, mix oats, flour and dried fruit with a pinch of salt, then set aside. Melt butter, sugar and syrup in a pan. Take off heat. 3 Mix 2tbsp boiling water and bicarb in a small bowl, stir into butter and sugar mix, then combine with dry oat mixture.
4 Make balls of mixture with an ice cream scoop and put on lined trays, leaving space between each. Flatten balls slightly. 5
Bake for 13-15 min, depending on whether you want chewy or crunchy cookies. They’ll set as they cool. Trays on bottom shelf of oven may need to come out 2-3 min after the top trays. Cool for a min on tray, then transfer to wire racks to cool fully.
