Eat Me Up!

Serves: 6 Prep Time: 20 min + chill­ing Cook Time: 45 min

175g plain flour

¼tsp salt

75g Trex

1tbsp caster su­gar

2 large egg yolks, lightly beaten


397g can con­densed milk

2 lemons, finely grated zest and juice of both

2 large eggs, sep­a­rated

50g caster su­gar


Pre­heat oven to 220C/ Gas 7. For pas­try, sift flour and salt into a large bowl, and rub in Trex un­til mix­ture re­sem­bles bread­crumbs. 2

Stir in su­gar and egg yolks, and mix to­gether to form a dough. Knead lightly, wrap and chill for 15 min.


Put ball of dough into mid­dle of a 20cm flan dish or pie plate and press it out us­ing back of a large spoon, un­til it evenly cov­ers base and sides of dish. Chill for 15 min.


rick pas­try base with a fork, line with foil, and bake for 10 min. Re­move foil, re­duce oven to 180C/ Gas 4 and bake for fur­ther 5 min, then cool.


For filling, mix con­densed milk with lemon juice and rind. Lightly beat egg yolks, stir into lemon mix­ture, pour into flan case and bake for 15-20 min, un­til set.


Whip egg whites in a grease-free bowl, grad­u­ally whisk­ing in re­main­ing su­gar un­til stiff and very glossy. Pile on top of pie, and then re­turn to oven for 8-10 min, un­til golden-brown.
