Eat Me Up!
Serves: 6 Prep Time: 20 min + chilling Cook Time: 45 min
175g plain flour
¼tsp salt
75g Trex
1tbsp caster sugar
2 large egg yolks, lightly beaten
Filling:
397g can condensed milk
2 lemons, finely grated zest and juice of both
2 large eggs, separated
50g caster sugar

Preheat oven to 220C/ Gas 7. For pastry, sift flour and salt into a large bowl, and rub in Trex until mixture resembles breadcrumbs. 2
Stir in sugar and egg yolks, and mix together to form a dough. Knead lightly, wrap and chill for 15 min.

Put ball of dough into middle of a 20cm flan dish or pie plate and press it out using back of a large spoon, until it evenly covers base and sides of dish. Chill for 15 min.

rick pastry base with a fork, line with foil, and bake for 10 min. Remove foil, reduce oven to 180C/ Gas 4 and bake for further 5 min, then cool.

For filling, mix condensed milk with lemon juice and rind. Lightly beat egg yolks, stir into lemon mixture, pour into flan case and bake for 15-20 min, until set.

Whip egg whites in a grease-free bowl, gradually whisking in remaining sugar until stiff and very glossy. Pile on top of pie, and then return to oven for 8-10 min, until golden-brown.
