Eat Me Up!

Makes 36 slices Prep 25 min, plus chilling Cook 3 min

110g unsalted butter

150g dark muscovado sugar 75g cocoa powder (sifted) 2 large eggs

1tbsp vanilla extract

2tbsp orange liqueur

225g digestive biscuits (broken into smallish pieces)

50g unsalted shelled pistachios 50g pecan nuts (halved) 110g mixed peel

110g dried cranberrie­s icing sugar (to dust)

Melt the butter in a pan 1

over a low heat. Add the muscovado sugar and stir to dissolve for 2-3 min until the mixture begins to bubble. Then remove from the heat and stir in the cocoa powder until smooth. Once evenly mixed, tip into a large bowl and leave to cool.

Beat the 2

eggs in a small bowl then, to remove the thready bits, strain through a sieve set over the mixing bowl. Add the vanilla and orange liqueur and stir well, before pouring in the biscuit pieces, pistachios, pecan nuts, peel and dried cranberrie­s and mixing thoroughly.

Divide mixture in half 3

and spoon on to two 45cm lengths of clingfilm. Roll evenly into a salami shape about 23cm long. Twist the ends of the clingfilm to secure and chill in the fridge for 6-8 hours, until firm. Once set, slice and dust with icing sugar to serve.
