Simple Beer Batter for Fish

Makes 3 cups batter to coat 2 1⁄2 dozen fish fillets.

2 cups flour, divided use

1 can (12 ounce) beer

1 teaspoon salt

Directions:

1. Prepare/thaw fish fillets and soak in water.

2. In a small bowl, add 1⁄2 cup flour.

Set aside.

3. In a separate bowl, combine 1 1⁄2 cups of flour with salt and the can of beer. Using a fork, stir ingredient­s well to combine.

4. Roll fish in flour to lightly dust and then dip in batter to coat. Fry fish in hot cooking oil in a deep skillet, turning to brown evenly until golden. Allow fish to set momentaril­y on paper towel lined platter before serving.
