Mix & match chocolate lollipops

Pick your chocolate, flavouring and topping, and let your imaginatio­n run wild.

MAKES 4 PREP 20min, plus setting COOK about 5min

• 100g (3½oz) dark, milk or white chocolate, chopped (keep separate)

Flavour suggestion­s:

• Peppermint extract or rose water

• ½tsp finely grated orange, lemon or lime zest

• Large pinch cayenne pepper, rock salt or freshly ground black pepper

Topping suggestion­s:

• Coloured chocolate, fudge chunks, chopped nuts, poppy seeds, crushed

sweets, chopped dried fruit, chilli flakes, crystallis­ed rose petals, crystallis­ed ginger, sugar sprinkles, silver balls

You will also need:

• Lollipop sticks

1 Line two large flat baking sheets with baking parchment. Melt your chosen chocolate in a heatproof bowl over a pan of simmering water (or blast on full power for 15sec bursts in the microwave until melted). Stir in your chosen flavouring, if using.

2 Spoon 1tbsp chocolate mixture on to the lined sheet and spread into a circle. Lay on a lollipop stick and add a little more chocolate to cover. Repeat with remaining chocolate.

3 While the chocolate is still wet, sprinkle over your chosen toppings and leave to set.
