THE LAUGHING COW AND FILO VEG TARTS

Makes 4

1 1/2tbsp olive oil, plus extra to grease

1 carrot (125g), peeled and diced

1 small courgette (150g), diced

1 stalk celery, diced 3 sheets filo pastry, cut into 13cm squares

1tbsp chopped parsley

4 x The Laughing Cow Original Triangles, diced

1 Preheat the to 180°C (160°C fan), mark 4. Lightly grease a large Yorkshire pudding tin.

2 Place the diced vegetables in a small roasting tin, season well and drizzle with 1/2tbsp olive oil. Roast for 10-12min, until the vegetables start to soften. 3 Meanwhile, brush one square of filo pastry with a small amount of the remaining olive oil and place in one of the holes in the tin. Repeat with another 3 sheets, layering them on top of each other at different angles. Repeat with the remaining pastry in the other holes.

4 Toss the parsley with the roasted vegetables, then spoon the mixture into the pastry cases.

5 Top with The Laughing Cow and bake in the oven for 12-15min, until the pastry is crisp and golden. Remove from oven and allow to cool for 5min. Carefully remove tarts from the tin and serve.
