Suzanne Corless, a local caterer at Heightside House on Newchurch Road, has made it through to the finals of the Premier Foods Dysphagia Chef of the Year Competition on September 1.

Dysphagia is the medical term for swallowing difficulties and affects roughly 8 per cent of the world’s population.

While it can affect individuals of all ages, it is estimated that approximately 60-75 per cent of people in care homes and 22 per cent of the world’s population over the age of 55 years are affected by dysphagia and require a puréed diet.

Suzanne, who will be one of five finalists competing said: “Patients at Heightside House have many varied dietary needs, including ●● Suzanne Corless, caterer at Heightside Nursing Home in Rawtenstall, and her steak and onion steamed pudding dysphagia, and our emphasis is on providing a delicious and nutritious menu to cater for all.”

In its mission to reappraise catering solutions for healthcare caterers, Premier Foods (makers of Bisto, Homepride and Ambrosia) launched the ●● The Rossendale Hospice ‘penny pinching’ boxes first ever ‘Dysphagia Chef of the Year Competition’ this year to test the culinary skills and creativity of chefs and caterers working in this specialist area.

The competition tasked them to develop two recipes, one main and one dessert, suitable for a dysphagia sufferer using at least one Premier Foodservice product.

Recipes had to meet specific requirements based on current UK standards developed by the National Patient Safety Agency, and two courses for one diner had to cost no more than £5.

Suzanne added: “I am delighted that the Premier Foods Dysphagia Chef of the Year Competition is highlighting the importance of this in our industry and I am thrilled to be a finalist.”

Suzanne was due to create her Steak and Onion Steamed Pudding at the live final on Thursday, September 1 at Premier Foods’ headquarters in Hertfordshire.

The five finalists will be competing for a chance to win £1,000 worth of kitchen equipment for their workplace.
