HERITAGE TOMATO AND BURRATA SALAD
MY new favourite cheese – a variety of mozzarella that’s pumped with cream for extra indulgence. Not the cheapest of cheeses, but worth the extra spend.
Serves 4 Ingredients
10 tomatoes – Heritage or plum are the best
2 shallots – chopped fine
Half a fennel – chopped fine
1 teaspoon caster sugar
2 tablespoons white wine vinegar
5 tablespoons extra virgin olive oil Rocket leaves 2 Burrata cheese
Method
1. Simply take the tomatoes and slice thinly arranging in a neat ring on each plate 2. Mix together the shallots, fennel, sugar, vinegar and olive oil and scatter all over the tomatoes. 3. Add a generous ball of rocket to each plate. 4. Cut the Burrata in half then place on top, shower with salt and a generous grind of pepper. Perfect as a light lunch or vegetarian meal.
