The Cocktail – Stiggins’ Fancy Pineapple Rum Daiquiri
It’s only fair to look at Plantation’s Bar Classics for our cocktail here – and we like mixing the Stiggins’ Fancy Pineapple into a Daiquiri

Each year, Plantation offers rum fans something to get excited about, with two Special Edition collections; Plantation Extrême and its Single Casks. Extrêmes change every year and is a celebration of a rum cask that the cellar master deems to be perfect in its natural state. For 2018, this was a Long Pond 1996. The Single
Casks are limited edition double-aged rums, which then mature further in either a beer, wine or spirit cask. In 2018, Single
Cask releases included a seven-years-old
Bajan rum matured in Mackmyra whisky casks and a 1998 vintage Guyanese rum matured in Ocho Tequila casks. Needless to say, Alexandre is tight-lipped about what we might expect in 2019.
On the Single Casks range Gabriel says,
“The range is made up of rums that see a third special maturation, creating unique and interesting flavour experiences. In 2019, we will see Barrel Swaps with Arran Distillery, Teeling and Kilchoman. And we always have our eyes open for future Barrel Swap partners. You may see in the future third maturations in beer or aquavit barrels.”
If that’s not enough, it appears that by looking to history, Plantation are planning exciting things for their rums in the future.
“We are continuing to dig deep into our centuries-old archives at West Indies Rum Distillery in Barbados. Every day we learn more about rum production history and techniques and these have inspired us in rum making today.
We also have the Vulcan chamber still back up and running at West Indies Rum Distillery. Neither a pot still nor a column still, but a beast of a different kind, the Vulcan is the last original chamber still existing in the world that we are aware of. We can’t wait to see what wonderful delights come from this still. All of these experiments will hopefully result in new one-of-a-kind rums next year.”
