Agricole: how to mix it
The complex flavours of an agricole-style rum can be shown off in any number of serves
TI’ PUNCH
Considered the national cocktail of Martinique, the Ti’ Punch (‘ti’ being the Creole version of the French ‘petit’, meaning small) includes a heavy dose of agricole with citrus and a sweetener. This recipe calls for cane syrup, but sugar syrup will work fine. • 60ml (2oz) rhum agricole, light or dark • 1 barspoon (c.15ml / 0.5oz) cane syrup • 1 lime wedge
• Lime peel coin, to garnish In a rocks glass, add the cane syrup and a squeeze of lime juice. Add the rhum agricole and a few ice cubes. Stir gently and garnish with a lime coin.
DAIQUIRI
This classic rum-based cocktail is a great way to showcase the complex flavour profile of an agricole. This version uses O Reizinho from Madeira, which is paired with lime for a greener citrus kick. • 60ml (2oz) That Boutique-y Rum Company
O Reizinho 3 Years Old
• 20ml (0.7oz) fresh lime juice
• 20ml (0.7oz) sugar syrup
• Lime wheel, to garnish Add all the ingredients to a shaker filled with ice. Shake well, until the outside of the shaker feels cold. Strain into a chilled coupe glass and garnish with a lime wheel.
EL PRESIDENTE
Created in Cuba and named for a former leader of the country, this cocktail traditionally uses white rum as a base and can be a great showcase for an agricole-style spirit.
• 45ml (1.5oz) white rum or rhum agricole
• 20ml (0.7oz) dry vermouth
• 15ml (0.5oz) orange Curaçao
• 2 dashes Grenadine
• Orange coin, to garnish
Add all the ingredients to a mixing glass with ice and stir. Strain into a coupette and garnish with an orange coin.
PLANTEUR
This Martiniquaise drink would traditionally be left to rest for 24 hours in the fridge, steeping with cinnamon and vanilla pods, before serving – but if you’re strapped for time, it’s still delicious without this step.
• 60ml (2oz) rhum agricole
• 35ml (1.2oz) orange juice
• 35ml (1.2oz) pineapple juice
• 20ml (0.7oz) lemon juice
• 10ml (0.3oz) Grenadine
• 10ml (0.3oz) sugar syrup
• 3-4 dashes Angostura bitters
• Orange slice or pineapple triangle and cocktail
cherry, to garnish
Add all the ingredients (except the Angostura bitters) to a shaker filled with crushed ice and shake. Pour into a Collins or highball glass, add the bitters and garnish with an orange slice/ pineapple triangle and cocktail cherry.
