BA­NANA, OAT AND RAISIN

Makes 16 bars

2 very ripe ba­nanas 150g dark brown sugar 135g rolled oats 100g melted co­conut oil 100g golden raisins 95g pecans, chopped 85g plain flour 30g co­conut flakes 1/2 tsp vanilla ex­tract 1/2 tsp bak­ing pow­der 1/2 tsp bak­ing soda 1/2 tsp salt 1/2 tsp cin­na­mon 1/2 tsp nut­meg

● Pre­heat oven to 180C/ 350F. Coat a 9"-square bak­ing tray with oil.

● In a bowl, mash ba­nanas with a fork. Add sugar, oil and vanilla. Com­bine un­til smooth.

● In a separate bowl, mix the bak­ing pow­der, bak­ing soda, salt, cin­na­mon, nut­meg, flour, oats and co­conut. Add the ba­nana mix­ture, pecans and raisins, and mix.

● Pour the mix­ture into the bak­ing tray and spread evenly. Bake for 20 mins. Al­low to cool. Cut into bars and wrap in cling film to keep fresh.
