SPICY TURKEY NOODLES

This prerun meal packs protein and carbs. Makes 6 servings

PREPARE 1 packet glass noodles according to instructio­ns; drain and leave aside. Heat 2 tbsp olive oil in a large pot over medium-high heat.

ADD 450g turkey mince and 225g turkey sausage (with casing removed); cook, using a spoon to crumble meat thoroughly, till browned through (8-10 mins). STIR IN 1 chopped yellow onion, 4 cloves minced garlic, 1 tsp red pepper flakes, 1 tsp dried oregano, 1/2 tsp salt and 1/4 tsp black pepper.

MIX IN 800g chopped, tinned tomatoes, reduce heat to low, cover and simmer, stirring occasional­ly, until slightly thickened (15-20 mins).

REMOVE from heat and serve over prepared glass noodles, sprinkling with more red pepper flakes to taste and chopped fresh basil.
