SPICY TURKEY NOO­DLES

This prerun meal packs protein and carbs. Makes 6 serv­ings

PRE­PARE 1 packet glass noo­dles ac­cord­ing to in­struc­tions; drain and leave aside. Heat 2 tbsp olive oil in a large pot over medium-high heat.

ADD 450g turkey mince and 225g turkey sausage (with cas­ing re­moved); cook, us­ing a spoon to crum­ble meat thor­oughly, till browned through (8-10 mins). STIR IN 1 chopped yel­low onion, 4 cloves minced gar­lic, 1 tsp red pep­per flakes, 1 tsp dried oregano, 1/2 tsp salt and 1/4 tsp black pep­per.

MIX IN 800g chopped, tinned toma­toes, re­duce heat to low, cover and sim­mer, stir­ring oc­ca­sion­ally, un­til slightly thick­ened (15-20 mins).

RE­MOVE from heat and serve over pre­pared glass noo­dles, sprin­kling with more red pep­per flakes to taste and chopped fresh basil.
