Green breakfast burrito
How do you like your eggs in the morning? With extra protein? Good. Adding spinach to the protein from the eggs makes this an excellent postrun brekkie.

INGREDIENTS
1½ tbsp butter
4 large eggs, beaten
2 handfuls of spinach, chopped
2 wholewheat tortillas 1 avocado, sliced
2 tbsp tomato salsa

MAKE IT
1 Start by melting the butter in a medium saucepan, then stir in the eggs. As they begin to set, add the spinach and the salt and pepper.
2 Stir continuously until the eggs are softly scrambled – around 2 mins. Then pour the eggs into the wraps and top with the avocado slices and the tomato salsa.
