How do you like your eggs in the morning? With extra protein? Good. Adding spinach to the protein from the eggs makes this an excellent postrun brekkie.

INGREDIENT­S

1½ tbsp butter

4 large eggs, beaten

2 handfuls of spinach, chopped

2 wholewheat tortillas 1 avocado, sliced

2 tbsp tomato salsa

► Salt and pepper

MAKE IT

1 Start by melting the butter in a medium saucepan, then stir in the eggs. As they begin to set, add the spinach and the salt and pepper.

2 Stir continuous­ly until the eggs are softly scrambled – around 2 mins. Then pour the eggs into the wraps and top with the avocado slices and the tomato salsa.
