Risotto

Serves four, nine ProPoints per serving. Preparatio­n time five minutes. Cooking time, 30 minutes.

Ingredient­s: Calorie controlled cooking spray; 400g cherry tomatoes; 850ml vegetable stock; 350g jar Weight Watchers mozarella and rocket sauce; one onion, finely chopped; 275g dried Arborio rice; 125g low fat mozzarella, drained and chopped; 70g rocket.

Method.

Preheat the oven to 200 degrees C, fan 180 degrees C, gas mark six. Put the tomatoes on a baking tray, mist with cooking spray and roast for 15 minutes.

Meanwhile, combine the stock and sauce in a pan, and bring to a simmer.

Mist another pan and fry the onion for five minutes.

Add a ladleful of the sauce and simmer, stirring, until it is almost absorbed. Repeat until you have one ladleful.

Add the last ladleful, and half the cheese. Cook, stirring, until the sauce is absored. Serve topped with the rocket and remaining cheese.
