Risotto

Rutherglen Reformer - - Health Matters -

Serves four, nine ProPoints per serv­ing. Prepa­ra­tion time five min­utes. Cook­ing time, 30 min­utes.

In­gre­di­ents: Calo­rie con­trolled cook­ing spray; 400g cherry toma­toes; 850ml veg­etable stock; 350g jar Weight Watch­ers mozarella and rocket sauce; one onion, finely chopped; 275g dried Ar­bo­rio rice; 125g low fat moz­zarella, drained and chopped; 70g rocket.

Method.

Pre­heat the oven to 200 de­grees C, fan 180 de­grees C, gas mark six. Put the toma­toes on a bak­ing tray, mist with cook­ing spray and roast for 15 min­utes.

Mean­while, com­bine the stock and sauce in a pan, and bring to a sim­mer.

Mist another pan and fry the onion for five min­utes.

Add a ladle­ful of the sauce and sim­mer, stir­ring, un­til it is al­most ab­sorbed. Re­peat un­til you have one ladle­ful.

Add the last ladle­ful, and half the cheese. Cook, stir­ring, un­til the sauce is ab­sored. Serve topped with the rocket and re­main­ing cheese.
