Tasty red onion and goat’s cheese tarts

These delicious bite-sized treats are great for a family friendly buffet this Mother’s Day, so why not treat her this year without worrying about your waistline?

Makes eight. Two SmartPoint­s per serving Prep time 20 minutes Cook time 25 minutes You will need: Calorie controlled cooking spray Two red onions, sliced One tsp light brown soft sugar Four sheets filo pastry 50g goats’cheese, torn into eight equal pieces

Eight sprigs fresh thyme Pinch black pepper

Preheat the oven to 190°C, fan 170°C, gas mark five.

Mist a large non-stick frying pan with cooking spray and cook the onions over a medium heat for five minutes, stirring frequently.

Add the sugar to the pan and cook, stirring occasional­ly, for a further five to eight minutes, or until the onions begin to turn a rich golden-brown colour. Set aside to cool.

Meanwhile, cut each filo sheet into quarters to make 16 x 10cm squares.

Mist each square with cooking spray then layer two squares into each hole of a non-stick eight-hole muffin tin, or individual loosebotto­med tart tins.

Bake for five to six minutes, until the pastry is almost cooked.

Remove from the oven and spoon the onions and goats’cheese evenly between the tart cases.

Top each tart with a thyme sprig and return to the oven for a further three to four minutes, until the cheese is just starting to melt.

Season the tarts with black pepper and serve as a starter.
