TODAY’S RECIPE: Jacket potato with feta and sumac

A BUDGET-friendly filling supper. SERVES 1

- ½ tsp garlic salt

Ingredient­s

1 baking potato 2 tsp olive oil 50g feta 50g Greek yoghurt 1 roasted red pepper from a jar (about 25g), finely chopped ½ tsp sumac Few basil leaves, to serve (optional)

Method

1 Heat oven to 220c/200c fan/gas 6. Prick potato all over with a fork and bake for one hour until golden outside and soft inside. Mix 1 tsp olive oil with garlic salt. Cut deep cross into top of the jacket, drizzle the garlic oil into the cross and rub it all over the outside. Return to oven and bake for 15 minutes more until the edges are golden and crispy.

2 Meanwhile, crumble feta into bowl, add yoghurt and whisk until creamy. Stir in red pepper with good grind of black pepper and spoon-whipped feta into jacket. Sprinkle with sumac, drizzle over the remaining 1 tsp oil and scatter torn basil leaves on top, if you wish.
