TODAY’S RECIPE: Supper in a parcel
A SURPRISE supper in parchment. Serves 4.
Ingredients
200g spaghetti 2 courgettes, grated 100g red cherry tomatoes, halved 100g yellow cherry tomatoes, halved 4 salmon fillets or 2 chicken breasts 4 tbsp olive oil 1 garlic clove, finely sliced
Method
1. Heat oven to 180C/160C fan/gas 4. Cook spaghetti following pack instructions, drain. Cut 4 rectangles of baking parchment off a roll, each twice as long as it is wide. Lay them on a worktop. Toss spaghetti with grated courgettes. Divide spaghetti between parchment, pieces, divide cherry tomatoes between each pile.
2. For salmon, slice lengthways, keeping fillet together. Place on top of veg, press sideways so slices move apart a little. For chicken, halve each breast through middle horizontally to give four pieces, cut each into strips and tip pile of chicken strips onto each spaghetti pile.
3. Heat oil and fry garlic for 1 min, pour a little garlic oil over each pile. Season with black pepper. Bring two longer sides of parchment up to meet in middle and fold ends over and over, working down towards the filling, leaving room for steam to expand parcel. Flatten the seam then fold in each end. Use paper clips to hold folds. Lift parcels onto a baking tray and bake for 10-15 min. The parcels should puff up as they cook.
4. Serve each person a puffed parcel in a shallow bowl and snip it open at the table, staying clear of any steam (removing any paperclips).
