TODAY’S RECIPE: Microwave shakshuka

SUPER-FAST supper. Shakshuka is a North African dish of eggs poached in a spicy tomato sauce. SERVES 1.

Ingredient­s

1 tbsp olive oil

200ml passata or canned tomatoes, whizzed to a paste

1 garlic clove, finely sliced 1

heaped tbsp red pepper salsa or ¼-½ red pepper, chopped

1 medium egg

1 tbsp chopped coriander Pitta bread

Method

1. Brush a microwave bowl or dish with a little of the oil. Stir passata, garlic and salsa together and season well. Tip into bowl and make a dip in centre. Break in egg, then prick yolk with tip of a sharp knife.

2. Cover bowl with clingfilm. Microwave on high for one minute, and then in 20-second bursts until the egg white is set. Scatter over coriander and serve with warmed pitta bread.
