TODAY’S RECIPE: Herb, celery and bulgur salad
HEALTHY, speedy lunch. SERVES 6.
Ingredients
200g 1 bunch bulgur celery wheat 1 dessert apple 1 lemon, juiced 4 tbsp olive oil Handful toasted hazelnuts, chopped 1 red chilli Large handful pomegranate seeds
Method
Small bunch parsley, chopped
Small bunch mint, chopped
Small bunch tarragon, chopped
1. Put the bulgur wheat in a large bowl and cover with boiling water. Cover with cling film and leave to absorb the water for 30 minutes.
2. Very finely slice the celery stalks and roughly chop the leaves. Cut the apple into matchsticks and toss in a little lemon juice. In a bowl, mix the remaining lemon juice with the oil and some seasoning.
3. Gently fluff up the bulgur with a fork. Mix the sliced celery and apple with the bulgur, followed by the nuts, chilli, pomegranate seeds and herbs. Drizzle over the dressing and toss everything together gently. Scatter with the celery leaves and serve.
