TODAY’S RECIPE: Curried chicken and new potato traybake

SPICY family dinner. Serves: 4.

Ingredient­s

8 chicken drumsticks

3 tbsp olive oil

1 tsp garlic paste

1 tsp ginger paste

1 tsp garam masala

1 tsp turmeric

150ml pot natural yoghurt

500g new potatoes, halved

4 tomatoes, chopped

1 red onion, chopped

Small pack coriander, roughly chopped

Method

1 Put drumsticks in a large bowl with 1 tbsp of the oil, garlic, ginger, garam masala, turmeric and 2 tbsp of the yoghurt. Toss together until coated. Leave to marinate for at least 30 minutes (or in the fridge overnight).

2 Heat oven to 180c/160c fan/gas 4. Put potatoes in a large roasting tin with remaining oil and season. Add chicken and bake for 40 to 45 minutes until cooked and golden.

3 Scatter tomatoes, onion, coriander and seasoning over chicken and potatoes, with remaining yoghurt served on the side.
