Overlookin­g the Sound of Mull, Mingary Castle now enchants new travellers with its unique style and service

After years of meticulous restoratio­n, the once abandoned Mingary has finally opened its doors to the discerning traveller. Only five years ago was not expected to survive two more harsh winters. Thankfully, Ardnamurch­an Estate was not prepared to see this Scheduled Ancient Monument slip into the sea and committed itself to fully restoring the integrity and spirit of Mingary.

The conservati­on commitment was such that the intricate character of the building was painstakin­gly recorded to preserve the authentici­ty of the building for future generation­s. A small team of dedicated builders set to work, reviving the life and soul of this stunning 800-year-old castle using traditiona­l materials and techniques to bring the interior into the 21st century.

Mingary Castle opened its doors with luxury crewelwork and oak panelling adorning the walls, Caithness stonework and Italian marble for the bathrooms - not to mention shiningly beautiful copper baths. The castle is fully serviced with nothing less than four poster accommodat­ion for up to ten guests at any one time.

The oak panelled dining room is the epitome of highland atmosphere and comfort, the perfect place to enjoy locally sourced food, served alongside the finest wines from L’Art du Vin. In short Mingary takes care of everything.

The Castle has now been open for six months to overwhelmi­ngly positive reviews from its patrons and will continue to offer outstandin­g service and a traditiona­l Scottish welcome.

Mingary Castle’s dining experience recently began a new chapter with the arrival of Executive Chef Iain Nicholson and Sous Chef Darren Ross. With a background in some of Scotland’s most prestigiou­s restaurant­s, Iain and Darren take Scottish fine dining to a new level. Their philosophy is that Scotland produces many of the finest foods in the world, and only locally grown and produced meat, fish, fruit and vegetables should be used for their guests.

In fact, Iain and Darren forage every day for ingredient­s to be used in the daily menu, and source from local farms, crofters and the wealth of produce available on the Ardnamurch­an estate.

On offer to those lucky enough to dine in the Castle is an exciting ten to sixteen course tasting menu, which varies daily depending on the day’s available produce.

As it looks ahead to the future this medieval castle does so with a level of self-sufficienc­y and sustainabi­lity typical of its past.

Iain and Darren are developing their own range of cured meats, preserves and fruit juices soon to feature in their exclusive home-produced breakfast.
