A sweet solution to doughnut dilemma

THESE doughnut makers are giving Krispy Kreme a run for its money.

The Early Bird Bakery and Cafe lies on Woodville Road in Cardiff .

It describes itself as a ‘breakfast and brunch restaurant’ but it is also known for making much-loved doughnuts.

Owner and head baker, Ceri Johnston-Bower, puts a lot of effort into making them perfect.

Ceri, 29, set up the shop just under three years ago in attempt to put her passion into practice.

Having spent her childhood in America she was determined to bring something to Wales that was lacking great tasting doughnuts.

“I grew up in Washington DC so, for me, the doughnuts you get in this country were like they came out of a machine whereas in America they really know how to make them,” she said.

“So I wanted to make something as good. That was the inspiratio­n behind it.”

But not only did Ceri bring great doughnuts to Wales, she has also worked to make great doughnuts as Welsh as she possibly can.

The brioche doughnuts aren’t only made in Wales, but they’re made from local produce.

The passionate baker said she was determined to make the delicious cakey goods from ingredient­s that have been sourced locally - she even designs the filling flavours in accordance with the seasons to make this possible.

Ceri said: “All the produce locally sourced as possible.

“The eggs we use are from Ellis Eggs based in Hirwaun and we use Welsh Organic Milk called Calon Wen.

“The flour we use is not Welsh but it’s from as close to the border as we can get it. We get it from Gloucester.

“We try to get things from as many local producers as we can.”

The shop goes all out at Christmas is as when they work on developing festive flavours and they also create indulgent chocolate flavours too.

At the store you’ll see everything from raspberry cheesecake to cookies and cream to key lime pie doughnuts.

The Early Bird also creates delicious street food doughnuts that go by the name of ‘doughnut bites’ where you’ll find doughnuts layered with other delicious sweet things.
