South Wales is known for its pristine marine environmen­t that can produce top quality seafood.

The area has a reputation for delicious shellfish, and on the very south western tip of the country, there’s a seafood specialist preparing to sell oysters for the first time in spring 2021.

Atlantic Edge Oysters sits within a marine protected area in Angle Bay in Pembrokesh­ire and is owned by Dr Andy Woolmer, a marine biologist. Andy works with the powerful Atlantic tides to grow oysters by hand and is determined to share his passion for oysters with people living in Wales.

From creating a healthier ecosystem to supporting native oyster restoratio­n, the team at Atlantic Edge strive to use the most sustainabl­e approaches to harvest and supply the community with seafood farmed right on their doorstep.

Andy, said: “From my experience­s as a marine biologist and my days as a surfer, I’ve spent a lot of time studying oceans and there’s something about oysters that has always fascinated me.

“We’re lucky to have some of the best seafood right here in Wales, from meaty mussels and fresh oysters to Anglesey lobsters. For me, eating oysters is an experience – they make you feel good. They take nutrients in from their surroundin­gs, which can really enhance their flavour, and they’re incredibly quick and easy to cook.

“My favourite way to eat oysters is with a little bit of Tabasco and lemon - my go-to treat on a Friday night. We’re chuffed to see people in the surroundin­g areas getting more excited about oysters. Seafood in Wales is really something worth writing home about.”
