Chicken carbonara

CARBONARA is incredibly popular in our restaurant, so this recipe is a tasty variant on ours, which is normally made with bacon.

This really tasty alternativ­e includes chicken with spinach, and is a perfect impromptu, easy and wholesome meal for any unexpected visitors.

Ingredient­s:

Enough pasta for four people 2 chicken breasts sliced 100g spinach 2 egg yolks 100ml single cream 50g grated Parmesan 2tsp olive oil Seasoning

Recipe:

In the normal way, cook and then drain your pasta, reserving some of the starchy liquid.

Heat the olive oil in a large, heavy-bottomed pan over a relatively low heat, and very gently fry the chicken until it is no longer pink in the middle but not brown on the outside. Add the spinach and sweat it.

Whisk the egg yolks together in a bowl, add to this the cream, grated Parmesan and a half cup of the starchy water. Add this mixture to the pan containing the chicken and very gently heat.

Add the pasta to the pan and thoroughly coat in the white sauce continuall­y stirring, add more of the starchy pasta water if necessary. Season to your taste. Serve and enjoy.
