Blueberry tarts to die for...

THESE stunning little tarts are sure to impress your friends and family and they taste absolutely delicious too, plus Blueberrie­s are so good for you – bonus!

Ingredient­s:

Pack of shortcrust pastry (or make your own) 375g blueberrie­s 30g & two tbsp caster sugar 1 tsp lemon juice 60g ground almonds 2 tbsp plain flour 40g butter, melted 1tsp vanilla extract 1tsp finely grated lemon rind 1 egg, lightly beaten Granulated sugar for sprinkling Preheat oven to 180c

Recipe:

Roll out your pastry and line six lightly-greased pie tins with 11cm pastry rounds.

Cut the remaining pastry into thin strips to make the lattice tops.

In a bowl mix the blueberrie­s together with two tbsp sugar and the lemon juice.

In a separate bowl combine the ground almonds, flour, sugar, butter, vanilla and lemon rind and divide between the pastry shells and level.

Top this with the blueberry mixture.

Finally weave pastry strips over the top of each tart, pressing the edges to seal.

Brush the tops with egg and sprinkle with the sugar.

Bake for 20-25 minutes or until the tops are slightly golden.

Totally show off and enjoy.
