Salmon in seafood sauce

AS WE come to the close of the samphire growing period I thought I would share this nutrient-rich recipe.

Salmon is one of our healthy super foods; seafood is abundant in zinc plus samphire and tomatoes are packed with essential vitamins and iron.

Ingredient­s:

4 quality salmon fillets

Olive oil

1 garlic clove, chopped or crushed

2 handfuls of samphire – sodium rich, so salt not necessary for this recipe

125ml white wine

1 fish stock capsule/stockcube 200g cherry tomatoes, halved 150g langoustin­es or king prawns shelled and de-veined

100g calamari (squid tubes) sliced into rings

200g fresh clams (order day before from local fishmonger) 200g mussels in their shells 300ml crème fraiche

1 lemon, cut into small wedges

Method:

Scrub and de-beard the mussels and rinse the clams, steam both in a covered pan with the white wine and garlic.

When the shells open remove from the pan with a slotted spoon.

Add the fish stock cube/capsule to the hot liquor and set aside.

In the same pan, sauté the calamari in a tablespoon of olive oil for three minutes.

Add the salmon and fish liquor from the shellfish and simmer for a further five minutes turning continuous­ly.

Finally, add the cherry tomatoes, prawns, shellfish, spinach and crème fraiche, simmer very gently.

Simmer for a further five minutes then serve immediatel­y with the lemon wedges. Enjoy!

Why salmon, samphire and tomatoes?

All are anti-inflammato­ry and loaded with nutrients and very powerful antioxidan­ts.

Salmon is rich in essential Omega 3 fatty acids, it is also a high-quality protein food that can reduce blood pressure, and an excellent source of essential vitamins and minerals, in particular B vitamins, potassium, selenium.

Samphire is high in salt but rich in fibre plus vitamins A, B and C, calcium, magnesium, potassium.

Tomatoes are a major dietary source of the antioxidan­t lycopene, and contain several vitamins and minerals including C, K1, B9, potassium, and beta-carotene.
