A tasty use for tomatoes

THIS easily put together dish celebrates the humble tomato. Low in calories, this offering is extremely tasty, perfectly versatile and great for a light evening meal or healthy lunch. Always go organic when possible.

Ingredient­s:

2 Beef Tomatoes

125g Fresh Mozzarella Cheese (Buffalo Mozzarella if you can get it)

12 Black or green Olives 8 Fresh Basil Leaves

1 tbsp Balsamic Vinegar

1 tbsp extravirgi­n Olive Oil

Sea Salt and Pepper

Fresh Basil

Leaves to garnish

Recipe:

Cut the tomatoes into

1cm thick round slices and sprinkle with sea salt. Drain the mozzarella and also cut into 1cm slices. Stone the olives and slice into rings.

To make the stacks - layer the tomatoes, mozzarella slices, olives and basil leaves alternatel­y, finishing with a layer of cheese on top.

Place each stack under a preheated hot grill for 2-3 minutes or just long enough to melt the mozzarella.

Drizzle with the balsamic vinegar and olive oil and season to taste with a little salt & pepper. It’s Healthy so Enjoy!!!

Tomatoes are lycopene and antioxidan­t rich, containing lots of essential vitamins and minerals which makes them an excellent health food, especially for heart health and inflammati­on.
