Rabbit and Pesto Tart

Ingredient­s

• Ready roll puff pastry

• Rabbit (diced)

• Pesto

• Tomatoes

• Mozzarella balls

• Baby spinach

This is a slight twist on a great chicken recipe, that works really well with bunnies. First take the diced rabbit and add it to a pan with a little oil to cook. As this is cooking take the tomatoes and cut them in half as well as slicing the mozzarella balls. The puff pastry can be left on a baking tray on the grease proof paper it's wrapped in. After the rabbit is cooked through, add it to a bowl and put a couple of table spoons of pesto to taste. The tomatoes can also be mixed in before the mixture is spread evenly over the pastry. The mozzarella can then be scattered throughout the rabbit and tomatoes and finish with a sprinkle of spinach. Glaze the edges of the puff pastry with a beaten egg and pop the tray in an oven and cook for around 20 minutes until the edges are golden brown. Once cooked, simply cut into sections and enjoy!
