White choco­late fruit tarts

TAKES 30MINS SERVES 6-8 Pre­heat oven to 180°C/gas 4. Gen­tly heat 150ml dou­ble cream in a pan. Re­move from the heat and add 100g chopped white choco­late and ½tsp vanilla ex­tract. Cool, then stir in 1 com­plete egg and 1 egg yolk. Pour into 6-8 ready-made but­ter pas­try cases and bake for 10-12 mins. Leave to cool, then top with 125g mixed fruit, sliced. Heat 2tbsp rasp­berry or apri­cot jam till melted and brush over the tarts. Chill be­fore serv­ing.
