Sea bass with cous­cous

TAKES 20MINS SERVES 2 125g ten­der­stem broc­coli 100g cous­cous 4 sea bass fil­lets 2tbsp olive oil 1 red onion, finely chopped 2tbsp pine nuts, toasted zest and juice of 1 le­mon mint leaves

Put the broc­coli in a pan of boil­ing wa­ter. Re­turn to the boil, then sim­mer for 2 mins. Add the cous­cous and turn off the heat. Brush the sea bass fil­lets with a lit­tle of the oil and pan fry for 2 mins on each side. Stir the onion, pine nuts, le­mon zest and juice, oil and mint leaves into the cous­cous. Serve with the sea bass on top.
