Jewelled couscous SALAD

TAKES 20MINS SERVES 6

200g giant couscous 1tbsp olive oil Juice 1 lemon 100g pomegranat­e seeds 3 spring onions, finely sliced Handful fresh parsley, chopped

Put the couscous in a pan of boiling water. Return to the boil and simmer for 6 mins. Drain well, coat in oil and leave to cool. Stir through the lemon juice, pomegranat­e seeds, spring onions and parsley, then season.

giant couscous makes a lovely alternativ­e to rice and is perfect served hot or cold
