4tbsp peperonata (sweet peppers in sauce) 2tsp sunflower oil 8 eggs, beaten 2 slices ham, cut into strips 100g reducedfat Cheddar, grated Fresh basil, torn, plus leaves to garnish Crusty bread and salad, to serve (optional)
Pre-heat the grill to medium-high. Then gently heat the peperonata in a saucepan. Brush a little oil in a small non-stick frying pan. Add ¼ of the beaten eggs, stir a little and cook for 5 mins, or until the eggs are lightly set. Add ¼ of the ham, some torn basil leaves and ¼ of the grated cheese. Place under the grill for 1 min, until golden. Spoon ¼ of the peperonata over the omelette and then fold in half. Repeat for the other three omelettes. Serve garnished with basil leaves, accompanied by crusty bread and salad.
