Bour­bon Beef ribs

Takes 2hrs 15mins serves 4 Put 1 rack of beef short ribs in a roast­ing tin with 2tsp smoked pa­prika, 2tbsp bour­bon, 2tbsp maple syrup and 1 beef stock cube. Rub into the meat, add 300ml boil­ing wa­ter and cover the tin with foil. Pre­heat oven to 180°C/gas 4. Cook the ribs for 2 hrs. Slice up the ribs and keep warm. Pour the juices into a jug (skim off the fat). Pour into a pan and bring to the boil. Bub­ble for 5 mins un­til syrupy. Baste the ribs with the sauce. Cook on a hot bar­be­cue, turn­ing un­til glazed and browned, baste again with any re­main­ing sauce and cook un­til pip­ing hot. Brush a corn­bread loaf with oil and grill un­til warmed.
