Bourbon Beef ribs
Takes 2hrs 15mins serves 4 Put 1 rack of beef short ribs in a roasting tin with 2tsp smoked paprika, 2tbsp bourbon, 2tbsp maple syrup and 1 beef stock cube. Rub into the meat, add 300ml boiling water and cover the tin with foil. Preheat oven to 180°C/gas 4. Cook the ribs for 2 hrs. Slice up the ribs and keep warm. Pour the juices into a jug (skim off the fat). Pour into a pan and bring to the boil. Bubble for 5 mins until syrupy. Baste the ribs with the sauce. Cook on a hot barbecue, turning until glazed and browned, baste again with any remaining sauce and cook until piping hot. Brush a cornbread loaf with oil and grill until warmed.
