Chicken with mushroom Sauce
Takes 30mins serves 4
2tsp oil 4 chicken breasts 30g butter 500g mushrooms, sliced 4 garlic cloves, crushed 200ml white wine 200ml double cream 2tbsp chopped parsley New potatoes and kale to serve
Preheat the oven to 180°C/gas 4. Heat the oil in a frying pan, season the chicken and fry for 2 mins on either side. Place on a baking sheet in the oven for 20 mins, or until cooked through. Melt the butter in the frying pan, turn up the heat and add the mushrooms and seasoning. Fry until browned slightly, then add the garlic and wine and bubble for a few mins. Reduce the heat and stir in the cream, simmering until the sauce has thickened slightly. Stir the parsley through the sauce and serve poured over the cooked, sliced chicken with the new potatoes and some kale on the side.
