Chicken with mush­room Sauce

Takes 30mins serves 4

2tsp oil 4 chicken breasts 30g but­ter 500g mush­rooms, sliced 4 garlic cloves, crushed 200ml white wine 200ml dou­ble cream 2tbsp chopped pars­ley New pota­toes and kale to serve

Pre­heat the oven to 180°C/gas 4. Heat the oil in a fry­ing pan, sea­son the chicken and fry for 2 mins on ei­ther side. Place on a bak­ing sheet in the oven for 20 mins, or un­til cooked through. Melt the but­ter in the fry­ing pan, turn up the heat and add the mush­rooms and sea­son­ing. Fry un­til browned slightly, then add the garlic and wine and bub­ble for a few mins. Re­duce the heat and stir in the cream, sim­mer­ing un­til the sauce has thick­ened slightly. Stir the pars­ley through the sauce and serve poured over the cooked, sliced chicken with the new pota­toes and some kale on the side.
