Takes 30mins serves 4 Thickly slice 500g new pota­toes and add to a pan of salted boil­ing wa­ter. Cook for 10 mins and drain. Pre­heat the oven to 220°C/gas 7. Put a roast­ing tin in the oven to heat up. Add the pota­toes, driz­zle over 1tbsp oil. Sea­son and scat­ter over 2tsp cumin seeds. Roast for 10 mins. Brush 4 had­dock fil­lets with 1tbsp olive oil. Add 8 quar­tered toma­toes and put the fish on top. Add a few sprigs of dill. Roast for 10 mins. Whisk 2tbsp olive oil with 1tbsp bal­samic vine­gar. Driz­zle over the fish and serve with rocket.
