Haddock bake
Takes 30mins serves 4 Thickly slice 500g new potatoes and add to a pan of salted boiling water. Cook for 10 mins and drain. Preheat the oven to 220°C/gas 7. Put a roasting tin in the oven to heat up. Add the potatoes, drizzle over 1tbsp oil. Season and scatter over 2tsp cumin seeds. Roast for 10 mins. Brush 4 haddock fillets with 1tbsp olive oil. Add 8 quartered tomatoes and put the fish on top. Add a few sprigs of dill. Roast for 10 mins. Whisk 2tbsp olive oil with 1tbsp balsamic vinegar. Drizzle over the fish and serve with rocket.
