Eight meringue nests, £1 light & easy meringue
Takes 1hr serves 4 300g frozen raspberries handful fresh raspberries 125g natural yoghurt 500ml natural frozen yoghurt 5 meringue nests, broken
in a food processor, briefly pulse 75g of the frozen raspberries so they are still chunky. pop them in the freezer for a while to firm up. blend the remaining frozen raspberries with the yoghurt until smooth, then gently stir into the softened frozen yoghurt along with around three-quarters of the meringue pieces, using as few movements as possible to create a ripple effect. sprinkle over the remaining meringue pieces and reserved raspberries. leave to firm up in the freezer for 1 hr, then take it out 15 mins before serving in chunky glasses with fresh raspberries on top.
