Takes 1hr serves 4 300g frozen rasp­ber­ries hand­ful fresh rasp­ber­ries 125g nat­u­ral yo­ghurt 500ml nat­u­ral frozen yo­ghurt 5 meringue nests, bro­ken

in a food pro­ces­sor, briefly pulse 75g of the frozen rasp­ber­ries so they are still chunky. pop them in the freezer for a while to firm up. blend the re­main­ing frozen rasp­ber­ries with the yo­ghurt un­til smooth, then gen­tly stir into the soft­ened frozen yo­ghurt along with around three-quar­ters of the meringue pieces, us­ing as few move­ments as pos­si­ble to cre­ate a rip­ple ef­fect. sprin­kle over the re­main­ing meringue pieces and re­served rasp­ber­ries. leave to firm up in the freezer for 1 hr, then take it out 15 mins be­fore serv­ing in chunky glasses with fresh rasp­ber­ries on top.
