Fruit cor­dial

Add a splash of elder­flower cor­dial to a glass of Cham­pagne for some­thing to cel­e­brate. Whip 142ml dou­ble cream to soft peaks and stir in 2tbsp elder­flower cor­dial for an al­ter­na­tive fill­ing for a Vic­to­ria sponge cake. Slice up some straw­ber­ries, peaches, black­ber­ries, melon and grapes and pop in a bowl with 1tbsp elder­flower cor­dial for a de­li­cious fruit salad. Put 4 seabass fil­lets on a large piece of foil. Slash the skin, then driz­zle over 4tbsp elder­flower cor­dial. Add a cou­ple of slices of lemon and scrunch the foil to­gether to seal. Cook on a bar­be­cue for 20 mins or un­til the fish is cooked through. Make crum­ble by mix­ing 3tbsp cor­dial into 450g pre­pared sweet­ened fruit be­fore adding a crum­ble top­ping. Bake for 20-25 mins at 180°C/ Gas 4.
