Add a splash of elderflower cordial to a glass of Champagne for something to celebrate. Whip 142ml double cream to soft peaks and stir in 2tbsp elderflower cordial for an alternative filling for a Victoria sponge cake. Slice up some strawberries, peaches, blackberries, melon and grapes and pop in a bowl with 1tbsp elderflower cordial for a delicious fruit salad. Put 4 seabass fillets on a large piece of foil. Slash the skin, then drizzle over 4tbsp elderflower cordial. Add a couple of slices of lemon and scrunch the foil together to seal. Cook on a barbecue for 20 mins or until the fish is cooked through. Make crumble by mixing 3tbsp cordial into 450g prepared sweetened fruit before adding a crumble topping. Bake for 20-25 mins at 180°C/ Gas 4.
