Berry & coconut frozen yoghurt

TAKES 10MINS (PLUS FREEZING) SERVES 8-10

160g can coconut cream 375ml cocount milk yoghurt 3tbsp runny honey 300g mixed frozen berries

Whisk the coconut cream, yoghurt and runny honey together until well combined and smooth. Stir the frozen berries into the mixture and crush some of them slightly. Put into a freezer-proof container lined with greaseproo­f paper and freeze for several hours, or preferably overnight, until firm to the touch. To serve, remove from the freezer and allow to soften at room temperatur­e for at least 30 mins.
