Grease a bak­ing sheet with a lit­tle olive oil and grill 2 x 250g packs of hal­loumi cheese (each sliced into six) for 2 mins on each side un­til slightly browned. Serve on plates with hand­fuls of rocket, the pea, bean and pine nut mix­ture and the dress­ing.
