nuts in a frying pan for 3 mins, stirring frequently until golden brown. Take care, as they burn easily. Add to the pea and bean mixture. Make the dressing by mixing 5tbsp olive oil, juice of 1 lemon, 1tsp caster sugar, 1 diced clove garlic, 1tbsp chopped mint, 1 finely chopped red chilli together and season. Grease a baking sheet with a little olive oil and grill 2 x 250g packs of halloumi cheese (each sliced into six) for 2 mins on each side until slightly browned. Serve on plates with handfuls of rocket, the pea, bean and pine nut mixture and the dressing.
