Mack­erel & bean salad

3tbsp whole­grain mus­tard 2tsp olive oil Zest and juice 1 lemon 4 mack­erel fil­lets 125g ten­der­stem broc­coli 400g tin mixed beans, drained and rinsed

Small hand­ful fresh mint, chopped 2 cour­gettes, finely sliced length­ways 1 red chilli, finely chopped 2tsp olive oil 25ml red wine vine­gar

Heat a grill to medium. in a bowl, mix to­gether the mus­tard, olive oil and the zest and juice of the lemon. put the mack­erel fil­lets on a grill pan and cover with two-thirds of the mus­tard paste. Grill for 2 mins on each side, cool a lit­tle, then flake. mean­while, cook the broc­coli for 3 mins in a pan of boil­ing wa­ter, then drain. mix the drained and rinsed mixed beans with the mint, cour­gette and al­most all of the chilli, olive oil, the rest of the mus­tard paste and the red wine vine­gar. Di­vide the bean mix be­tween four plates and top with the broc­coli and mack­erel. Gar­nish with mint leaves and chilli.
