Mackerel & bean salad
Takes 15mins serves 4
3tbsp wholegrain mustard 2tsp olive oil Zest and juice 1 lemon 4 mackerel fillets 125g tenderstem broccoli 400g tin mixed beans, drained and rinsed
Small handful fresh mint, chopped 2 courgettes, finely sliced lengthways 1 red chilli, finely chopped 2tsp olive oil 25ml red wine vinegar
Heat a grill to medium. in a bowl, mix together the mustard, olive oil and the zest and juice of the lemon. put the mackerel fillets on a grill pan and cover with two-thirds of the mustard paste. Grill for 2 mins on each side, cool a little, then flake. meanwhile, cook the broccoli for 3 mins in a pan of boiling water, then drain. mix the drained and rinsed mixed beans with the mint, courgette and almost all of the chilli, olive oil, the rest of the mustard paste and the red wine vinegar. Divide the bean mix between four plates and top with the broccoli and mackerel. Garnish with mint leaves and chilli.
