Spicy chicken burritos
Takes 30mins serves 2 Preheat the oven to 200°C/ Gas 6. Fry 1 sliced red onion and 250g mixed peppers in 1tbsp olive oil for 5 mins. Add 1tbsp Cajun spice mix and 400g boneless chicken thighs and fry for a few mins. Add a 400g can plum tomatoes and cook for 3 mins. Divide between 4 large tortillas and roll up. Arrange in an ovenproof dish and spoon over the remaining plum tomatoes. Mix together 200g natural yoghurt, 1tbsp cornflour and 65g grated mature Cheddar and spoon over the top. Scatter with 60g grated mature Cheddar and bake for 20 mins.
