Noodle soup

TAKES 20MINS SERVES 4

175g dried udon noodles

1.5 litres beef stock

5cm piece fresh root ginger, sliced

1 sachet miso instant soup paste

1-2tbsp soy sauce

1 red chilli, sliced

1 clove garlic, sliced

250g mushrooms, sliced

100g mangetout, sliced

150g fillet steak, sliced

2 spring onions, trimmed and shredded

1 Cook noodles according to pack instructio­ns. Drain. 2 Heat stock with ginger in a pan. Whisk in miso paste and soy sauce. Bring to the boil and add chilli, garlic and mushrooms; simmer for 3 mins. 3 Add mangetout and meat. Simmer for 2 mins. Season. Divide noodles between 4 warm bowls; pour over hot broth. Top with spring onions.
