175g dried udon noo­dles

1.5 litres beef stock

5cm piece fresh root ginger, sliced

1 sa­chet miso in­stant soup paste

1-2tbsp soy sauce

1 red chilli, sliced

1 clove garlic, sliced

250g mushrooms, sliced

100g mangetout, sliced

150g fil­let steak, sliced

2 spring onions, trimmed and shred­ded

1 Cook noo­dles ac­cord­ing to pack in­struc­tions. Drain. 2 Heat stock with ginger in a pan. Whisk in miso paste and soy sauce. Bring to the boil and add chilli, garlic and mushrooms; sim­mer for 3 mins. 3 Add mangetout and meat. Sim­mer for 2 mins. Sea­son. Di­vide noo­dles be­tween 4 warm bowls; pour over hot broth. Top with spring onions.
