BAKE THESE meringues up TO A WEEK in AD­VANCE, AND KEEP THEM in A SEALED CON­TAINER BE­FORE Adding your FAVOURITE fruity fill­ing

3 egg whites 175g golden caster sugar 1tsp vanilla ex­tract 1tsp corn­flour 400ml crème fraiche 250g pas­sion-fruit curd 1/2 tsp ed­i­ble gold glit­ter, op­tional

1 Heat the oven to 120°C/ Gas 1 / 2 . Whisk egg whites un­til stiffly peak­ing. Whisk in the sugar 1tbsp at a time, then the vanilla and corn­flour. 2 Pipe 16 x 6cm rounds onto baking sheets. Bake for 1 hr 30 mins un­til firm. Re­move from oven and leave to cool. 3 Spread 8 rounds with crème fraiche and curd, top each with an­other round and sprin­kle on glit­ter, if us­ing.
