3 egg whites 175g golden caster sugar 1tsp vanilla extract 1tsp cornflour 400ml crème fraiche 250g passion-fruit curd 1/2 tsp edible gold glitter, optional
1 Heat the oven to 120°C/ Gas 1 / 2 . Whisk egg whites until stiffly peaking. Whisk in the sugar 1tbsp at a time, then the vanilla and cornflour. 2 Pipe 16 x 6cm rounds onto baking sheets. Bake for 1 hr 30 mins until firm. Remove from oven and leave to cool. 3 Spread 8 rounds with crème fraiche and curd, top each with another round and sprinkle on glitter, if using.
