SWEET POTATO CHOWDER
takes 30 mins serves 4
1tbsp oil 200g bacon lardons 1 onion 1 garlic clove, crushed 1 tsp sweet smoked paprika
2 sweet potatoes, peeled and diced 1.2ltr hot chicken stock 3 thyme sprigs 300g sweetcorn
75g crème fraîche
1 Fry the bacon in 1tsp oil for 4 mins. Set bacon aside and wipe out the pan. 2 Warm a little oil in the pan and cook the onion for 4-5 mins. Add garlic and paprika and cook for 1 min. 3 Add potatoes, stock and thyme, bring to the boil and simmer for 15 mins. Add the sweetcorn, crème fraîche and lardons and heat through for about 5 mins.
