1tbsp oil 200g ba­con lar­dons 1 onion 1 gar­lic clove, crushed 1 tsp sweet smoked pa­prika

2 sweet pota­toes, peeled and diced 1.2ltr hot chicken stock 3 thyme sprigs 300g sweet­corn

75g crème fraîche

1 Fry the ba­con in 1tsp oil for 4 mins. Set ba­con aside and wipe out the pan. 2 Warm a lit­tle oil in the pan and cook the onion for 4-5 mins. Add gar­lic and pa­prika and cook for 1 min. 3 Add pota­toes, stock and thyme, bring to the boil and sim­mer for 15 mins. Add the sweet­corn, crème fraîche and lar­dons and heat through for about 5 mins.
