takes 2hrs-2hrs 30mins serves 4 Warm a casse­role in oven at 160°C/gas 3. Heat 1tbsp oil in large pan, add 1 chopped onion, 4 car­damom pods, 3tsp cumin, 3tsp ground co­rian­der and 1tsp turmeric, cook for 5-6 mins. Add 1 sliced green chilli, 1 crushed gar­lic clove, 1tbsp grated root gin­ger, stir-fry for a minute, then tip into the heated casse­role. Add 1 diced but­ter­nut squash, 1 chopped cau­li­flower, 1 chopped red pep­per and 600ml stock. Cook in oven for 1 hr 30 mins – 2 hrs. Stir in 200g mixed edamame beans and sweet­corn and 150g plain yo­ghurt. Heat for 10 mins. Add 2-3tbsp flaked al­monds and a few sprigs of co­rian­der on top.
