takes 2hrs-2hrs 30mins serves 4 Warm a casserole in oven at 160°C/gas 3. Heat 1tbsp oil in large pan, add 1 chopped onion, 4 cardamom pods, 3tsp cumin, 3tsp ground coriander and 1tsp turmeric, cook for 5-6 mins. Add 1 sliced green chilli, 1 crushed garlic clove, 1tbsp grated root ginger, stir-fry for a minute, then tip into the heated casserole. Add 1 diced butternut squash, 1 chopped cauliflower, 1 chopped red pepper and 600ml stock. Cook in oven for 1 hr 30 mins – 2 hrs. Stir in 200g mixed edamame beans and sweetcorn and 150g plain yoghurt. Heat for 10 mins. Add 2-3tbsp flaked almonds and a few sprigs of coriander on top.
