CHEESY TUNA & PASTA BAKE
you can chill the batter overnight and stir in veg ju st before cooking
takes 25mins serves 4 Fry 1 finely chopped onion in 1tbsp oil for 5 mins. Add 5 chopped mushrooms and cook for a further 5 mins. Stir in 150g sweetcorn, 400g chopped tomatoes and 3tbsp tomato purée and simmer. Meanwhile, cook 300g penne pasta until just tender. Drain and stir into the sauce along with 180g tinned tuna. Spoon into a large dish. Crush 25g ready-salted crisps and sprinkle over the top with 100g mature Cheddar. Grill for a few mins until the cheese is melted.
